Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
with pork neck
Season the slices of lightly marbled pork neck with sea salt, paprika, coriander, pepper, chili, curry, caraway, and savory. Set aside and let stand. Gently heat the butter until lightly browned, then remove from the heat. Gently brown the onions in a large pan with clarified butter, then add the spicy pickled garlic. Season with sea salt to taste. Push the onion mixture to one side and fry the meat slices in the same pan, turning the onion rings frequently to prevent them from blackening. Arrange the meat slices on plates, scatter the onion mixture on top, and drizzle with the brown butter (nut butter).
