Ingredients for 1 servings:
- 500 g sweet potatoes
- 3 tbsp coconut oil
- 120 g coconut blossom sugar
- 1 egg(s)
- 100 ml rice syrup
- 1 tsp cinnamon
- ½ tsp salt
- ¼ tsp vanilla powder
- 1 tsp ginger powder
- 3 tbsp milk (lactose-free milk 300)
- 300 g spelt flour
- 3 tsp baking powder
- 100 g chopped nuts, e.g. walnuts or cashews
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
for a normal loaf pan, fructose and lactose free
Peel the sweet potatoes, chop them into small pieces, and boil them until soft. Drain the cooking water and then mash the sweet potatoes into a paste. Add all the remaining ingredients and mix well. Pour into a greased loaf pan. Bake for 60 minutes in a preheated oven at 180°C (350°F).
