Spelt and coconut mini muffins

Ingredients for 1 servings:

  • 40 g bran (spelt or wheat)
  • 30 g desiccated coconut, fine
  • 50 g wholemeal spelt flour
  • 30 g brown sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 25 g raisins, very finely chopped
  • 175 ml soy milk (soy drink) or regular milk
  • 1 egg(s)
  • 2 tbsp oil
  • 2 tbsp desiccated coconut, for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

With spelt bran, low in fat and high in fiber

Preheat the oven to 200°C (top and bottom heat) or 180°C (fan oven). Combine the dry ingredients with the finely chopped raisins and set aside. Then combine the milk, oil, and egg and roughly mix with the other ingredients until moistened. Pour the mixture into a greased mini muffin or tartlet tin and bake for about 12-15 minutes until golden brown. Makes 12.
