Asparagus and arugula salad with strawberry dressing

Ingredients for 2 servings:

  • 500 g asparagus, white
  • 250 g arugula
  • 4 tbsp vinegar (strawberry balsamic vinegar)
  • 2 tbsp olive oil
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and peel the asparagus, and trim off the woody ends. Slice diagonally. Fry in a pan with a little olive oil. Add a little salt and a pinch of sugar. It’s okay if the asparagus takes on some browning. When the asparagus is cooked, remove it from the pan and marinate it in the strawberry balsamic vinegar, salt, and olive oil. The longer the asparagus marinates, the more it absorbs the strawberry flavor. Finally, mix the cleaned arugula with the asparagus. Serve with white bread or as a side dish. I get the strawberry balsamic vinegar from a barrel at a vinegar and oil shop. I was really surprised at how clearly you could taste the strawberry flavor. I found it particularly delicious with asparagus.
