Ingredients for 1 servings:
- 4 eggs
- 250 g sugar
- 4 packets of vanilla sugar
- 125 ml oil
- 150 ml Fanta
- 250 g wheat flour
- 3 tsp, leveled baking powder
- 2 gr. can/n peach(s) (470 g drained weight each)
- 3 packs of cream stiffener
- 600 ml whipped cream
- 500 g sour cream
- Cinnamon for dusting
- Grease for the tray

For the batter, beat the eggs, sugar, and a sachet of vanilla sugar with the whisk attachment on a hand mixer on high speed until frothy. Stir in the oil and Fanta. Mix the flour and baking powder, sift, and stir in portions on medium speed. Spread the batter onto a greased baking tray. Bake in a preheated oven (top/bottom heat: approx. 180°C, fan: approx. 160°C, gas mark 2-3) for about 25 minutes. Allow the cake to cool on the baking tray. For the topping, drain the peaches in a sieve and cut into small pieces. Whip the cream with the cream stiffener and vanilla sugar until stiff. Mix the sour cream with the remaining sugar. Stir the peach pieces into the sour cream and fold in the cream loosely. Spread the mixture evenly over the cold cake and sprinkle with cinnamon.
