Strawberry waffles

Ingredients for 2 servings:

  • 100 g butter, room temperature
  • 40 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 tbsp lemon peel, grated
  • 2 egg yolks
  • 100 ml buttermilk
  • 50 ml cream
  • 125 g flour
  • 1 tsp, leveled baking powder
  • 50 g ground almonds
  • 2 egg whites, beaten stiffly
  • 175 g strawberries, very finely diced
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the strawberries, dry thoroughly, and dice very finely. Cream the butter, sugar, vanilla sugar, salt, and lemon zest until fluffy. Stir in the egg yolks, buttermilk, and cream. Mix the flour with the baking powder and almonds and stir in. Beat the egg whites until stiff peaks form and fold in the diced strawberries. Bake in batches in an oiled waffle iron at high temperature for about 4-5 minutes until crispy. Sprinkle with powdered sugar. Tip: If you don’t have any buttermilk on hand, mix 225 ml of milk with 2 tablespoons of lemon juice or vinegar and let stand for 5 minutes. This yields 250 ml of finished buttermilk.
