Ingredients for 2 servings:
- 2 m.-sized onion(s)
- 2 cloves garlic
- 300 g mushrooms
- 250 g macaroni or spaghetti
- 200 ml vegetable stock
- 400 ml coconut milk
- 2 frankfurters
- salt and pepper
- some curry powder
- some paprika powder, sweet
- some parsley, for garnishing
- some chives, for garnishing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Finely dice the onions and garlic, trim and slice the sausages and mushrooms. Heat a little oil in a pan, first fry the sausages and onions, then the garlic and mushrooms. Add the noodles, vegetable stock, and coconut milk and simmer over medium heat for about 10-12 minutes, until everything is nice and creamy. Stir frequently. Season to taste with salt, pepper, curry powder, and paprika. Garnish with parsley and chives and enjoy.
