Pineapple – Vanilla – Jam

Ingredients for 4 servings:

  • 1 ½ kg pineapple (pure flesh), fresh
  • 4 vanilla pods
  • 1 kg gelling sugar, 1:2

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

(makes approx. 4 jars of 200 g each)

Cut the pineapple flesh into large cubes and then puree in a blender. Grind the vanilla pods and add them to the pineapple. Bring to a boil with the preserving sugar, simmer gently for about 3-4 minutes, and test for settling. Pour the mixture into sterilized jars while still hot. Seal immediately and turn upside down. After about 1 hour, turn the jam upside down again and let it cool. The jam will only taste good after it has stood for a few days, when the flavor of the vanilla pod will have fully infused.
