Goat cheese patties with vegetables

Ingredients for 2 servings:

  • 1 zucchini
  • 3 tomatoes
  • 1 onion(s), red
  • 1 bell pepper(s), red
  • 8 tbsp olive oil
  • salt and pepper
  • 2 tbsp lemon juice
  • 2 cheeses (goat cheese or sheep cheese), light if necessary
  • 1 shot of honey
  • 1 dash of olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

also possible with sheep’s cheese

Preheat the oven to 200°C (top/bottom heat). Wash the zucchini, tomatoes, and bell peppers. Deseed the tomatoes and peel the onion. Cut everything into bite-sized pieces. Mix together the olive oil, pepper, salt, and lemon juice. Pour the sauce over the vegetable mixture and mix well. Transfer to a baking dish. Place the goat cheese or feta cheese on top of the vegetable mixture, drizzle with a little olive oil and honey, and rub the cheese into the surface. Cook on the middle rack for about 20 minutes.
