Ingredients for 3 servings:
- 1 pack of turkey breast fillet(s) (turkey premium inner fillet), 400 g
- 6 slice(s) ham (Black Forest ham)
- 450 g tomatoes
- 3 cucumber(s), halve (pickle)
- 100 g onion(s), 1 cut into rings
- 100 g red wine (cooking wine)
- 100 g water
- n. B. Herbs de Provence
- Salt and pepper, coarsely ground
- 250 g cheese, raclette cheese coarsely grated (grated)
- 250 g pasta, as desired (tricolore or nature)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with Black Forest ham, tomatoes and raclette cheese
Cut the turkey fillet into 6 medallions, season, and wrap with the ham. Secure with toothpicks. Sear in a frying pan for about 4-5 minutes on each side, deglaze with the red wine, and add the onions. Reduce the heat briefly, then remove the meat pieces and place them in an ovenproof dish and keep warm. Meanwhile, add the water, bring the onions to a boil, and season if desired. Pour everything over the meat. Place the well-seasoned tomato slices on top, scatter the grated cheese over them, and sprinkle with a little “Herbes de Provence.” Bake in the oven for 10 minutes with top heat. During this time, cook the pasta according to the package instructions. Serve on hot plates, “en guete.” Tip: You can also use Gouda, mozzarella, or Gruyère instead of raclette cheese. All types of pasta are suitable. Rice would also work. Pork fillet or chicken breast could certainly be used as well.
