Gnocchi with avocado cream

Ingredients for 2 servings:

  • 1 handful of basil leaves
  • 2 garlic cloves
  • 2 avocados
  • Salt
  • chili powder
  • 2 tbsp lemon juice
  • 8 small tomatoes
  • 500 g gnocchi
  • 2 tbsp butter
  • e.g. pine nuts

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely chop the basil leaves. Peel and roughly chop the garlic. Scoop the flesh from the avocado and puree everything together. Season with salt, chili powder, and lemon juice. Halve the tomatoes. Cook the gnocchi in salted water for 2 minutes, then drain slightly. Heat the butter in a pan and fry the gnocchi. Add the avocado cream and tomatoes and heat briefly. Toast the pine nuts in another pan without oil and sprinkle over the gnocchi.
