Ingredients for 4 servings:

  • 800 g minced beef
  • 2 tomatoes, fresh, thinly sliced
  • 80 g arugula
  • 50 g tomatoes, dried, cut into strips
  • 100 g Parmesan, thinly sliced
  • 1 garlic clove(s), finely chopped
  • 4 tbsp pesto, red or green
  • 4 tbsp olive oil
  • 2 tsp rosemary
  • 2 ciabatta

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut both ciabattas lengthwise and horizontally. Cut two burger bases and lids from each ciabatta (without the ends, as they are too hard). Combine the sun-dried tomatoes, garlic, rosemary, and 3 tablespoons of olive oil and stir to combine. Form the ground beef into four flat patties and fry them in a pan with 1 tablespoon of olive oil. Fry the meat ‘raw,’ ‘medium,’ or ‘well done,’ depending on your taste. Spread one tablespoon of pesto on each ciabatta half for each burger. Fill the ciabatta with arugula, ground beef, fresh tomatoes, shaved Parmesan, and then the rosemary, tomato, garlic, and olive oil mixture. Finally, place the other ciabatta half on top and serve.
