  • 4 egg whites
  • 1 tbsp sugar

  • 4 small apples, finely sliced, or fruit of your choice
  • Butter, for frying

Potato pancakes with apples or blueberries

Mash the potatoes, beat the egg whites until stiff (with a pinch of salt if desired). Mix with the sugar until smooth. Then stir in the flour and add the mineral water until the mixture becomes liquid again. Finally, gently fold in the fruit (finely sliced ​​apples, or alternatively, a suitable amount of blueberries or wild berries, which is also delicious) and the beaten egg whites. Heat plenty of butter in a pan and fry the batter in batches until golden brown.
