Ingredients for 2 servings:
- 65 g flour
- 100 ml milk
- 1 egg(s) , (M)
- 1 tsp vanilla sugar
- 1 pinch of salt
- 1 tbsp brittle
- 2 apples, soft variety
- Sugar and cinnamon, as desired
- Oil, for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Put the flour in a tall bowl and mix with the milk, egg, salt, and vanilla sugar to form a smooth batter. Peel the apples and cut them into thin slices (drizzle with a little lemon juice if desired). Heat the oil in a large, non-stick frying pan. Pour all of the batter into the pan and spread the apple slices evenly over the batter. Sprinkle the brittle over the pancakes. Cook the pancakes slowly on the smooth side until the batter sets in the middle. Then, using two spatulas, flip the pancake (to the apple side). Immediately turn off the heat and finish cooking the pancake using the residual heat. Place a large plate on the pan and flip it over with a flourish. Sprinkle with sugar and cinnamon, if desired, and serve. We like to eat the pancakes with maple syrup.
