Porcini mushrooms on toast

Ingredients for 4 servings:

  • 600 g porcini mushrooms, cleaned
  • 6 tbsp olive oil
  • ½ tsp rosemary
  • ½ tsp thyme
  • e.g. salt and pepper
  • 2 cloves garlic, crushed
  • 4 slices of toast
  • e.g. lemon juice
  • e.g. butter for frying
  • e.g. Parmesan, grated, for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 45 minutes

Slice the cleaned mushrooms. Mix the olive oil, rosemary, thyme, salt, pepper, and garlic into a marinade. Pour the mixture over the mushroom slices, cover, and refrigerate for about 2 hours. Fry in a pan with melted butter over high heat for 6-8 minutes. Stir occasionally and season to taste. Toast the bread slices, place the mushrooms on top, drizzle with lemon juice, and sprinkle with Parmesan cheese. Briefly bake in a preheated oven at approximately 180-200°C (top/bottom heat) until the cheese has melted.
