Toasted bread with creamed spinach and fried egg

Ingredients for 2 servings:

  • 2 slices of toast
  • 100 g baby spinach
  • 80 ml cream
  • 2 tbsp Gorgonzola
  • 2 eggs
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 clove(s) garlic
  • nutmeg
  • Salt and pepper (seasoning salt and pepper mix)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Heat butter in a pan and fry the bread for 1 minute on each side. Heat olive oil in a saucepan. Peel the garlic, slice it, and fry it briefly. Meanwhile, remove the bread from the pan and set it aside. Then add the baby spinach to the pan with the garlic. Reduce the heat, season with salt and pepper, and cook for 2 minutes. Return the pan to the heat and fry the egg in the remaining butter over medium heat. Meanwhile, add the Gorgonzola and cream to the spinach and reduce over medium heat. Season with a pinch of nutmeg. Place the bread on separate plates, add the spinach and its liquid, and arrange a fried egg on top. Then season with salt.
