Ingredients for 4 servings:
- 1 mango(s), peeled, diced
- 1 pepper, red, pitted, finely diced
- 1 onion(s), red, finely diced
- 2 tbsp honey
- 1 tbsp lemon juice
- Red pepper, freshly ground
- Sea salt
- 2 tbsp lemon balm, finely chopped
- 2 tbsp parsley, flat-leaf, chopped
- 50 g pine nuts, dry roasted
- 2 lettuce hearts (optional), finely chopped or lamb’s lettuce
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes
Combine everything except the pine nuts and lettuce and refrigerate for 2 hours. Just before serving, drape the salsa over the lettuce and sprinkle with the pine nuts. Tip: Serve well with fried shrimp or scallops, perhaps in combination with avocado and apple tartar.
