Mug cake for baking tray or muffin tin (approx. 24 muffins), super quick and easy
I use a standard-sized mug with a capacity of about 250-300 ml. Mix eggs, sugar, vanilla sugar, flour, baking powder, orange soda, and oil into a soft, runny batter. If desired, you can also mix chocolate sprinkles or blueberries into the batter (fold these in carefully, as fresh ones burst very quickly). Spread the batter onto a baking sheet lined with baking paper (for easier removal later) or onto two muffin trays including paper cases (for 12 muffins each). Only fill the muffin tins halfway up; about 1-1.5 tablespoons of batter per muffin is sufficient. Bake in a preheated oven at approx. 180-200°C for approx. 15-20 minutes. Add more depending on your preference, but be careful, otherwise it can quickly become too dark. Do a skewer test if necessary. When no raw batter sticks to the skewer, the cake is ready. Let the cake cool, or remove the muffins from the tin and let them cool. Decorate if desired. To do this, make a glaze from powdered sugar and orange juice and spread it over the cake. Then, if desired, sprinkle with mini Smarties, colorful sprinkles, or gummy bears. Or simply insert small cherry lollipops (after baking, of course) into blueberry muffins – and you’re done! Perfect for a birthday party at kindergarten.
