South Tyrolean wine soup

Ingredients for 4 servings:

  • ½ liter soup (strong beef broth)
  • 4 egg yolks
  • ¼ liter cream
  • ¼ liter of white wine (Grüner Veltliner)
  • 1 roll(s)
  • 1 tbsp butter
  • Salt
  • nutmeg
  • Cinnamon

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the bread into cubes, toast in butter, and sprinkle with cinnamon. Whisk the egg yolk, cream, and white wine, pour into the hot meat broth, and whisk over low heat until the mixture is nice and creamy. Season the soup with salt and nutmeg, ladle into a warmed soup bowl, and sprinkle with bread cubes and a pinch of cinnamon.
