Ingredients for 4 servings:
- 50 g butter
- 120 g flour
- 275 ml milk
- 100 g cheese (Gouda)
- 100 g Parma ham
- 1 pinch(s) of salt and pepper
- 2 eggs
- 100 g breadcrumbs
- 150 ml olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes
Melt the butter over low heat. Gradually stir in 70g of flour until a soft, thick paste forms. Slowly stir in the milk, stirring constantly. Dice the cheese and let it melt into the mixture. Remove the pan from the heat. Finely dice the Parma ham and stir it in as well. Season the mixture with salt and pepper. Once cooled, let it swell and firm up in the refrigerator for at least 30 minutes. Beat the eggs. Using 2 teaspoons, form the cold mixture into small balls. Roll them in the remaining 50g of flour, then dip them in the beaten eggs and breadcrumbs. Fry in hot olive oil over medium heat for 2-3 minutes on each side until golden brown. Drain on kitchen paper.
