  • 500 g honey, clear
  • 20 g lavender (lavender flowers) or rose petals, dried

Place dried lavender or rose petals in a large jar. Heat the honey in a double boiler until it thins out and pour it over the petals. Seal the jar tightly and let the honey steep with the petals for 18 days. Then heat the honey again in a double boiler until it thins out and strain the petals. The honey tastes especially good as a sugar substitute in tea or as a spread on bread.
