Noodle soup with Maultaschen

Ingredients for 2 servings:

  • 1 ½ liters of meat broth or vegetable broth
  • 1 large carrot(s)
  • 100 g soup noodles (preferably shell noodles)
  • 4 Maultasche(n), bought or homemade
  • 1 tbsp tomato paste
  • e.g. salt and pepper
  • n. B. Nutmeg
  • 1 handful of chives, dried

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Peel the carrot and slice it into wafer-thin slices. Bring the broth to a boil along with the tomato paste and seasonings (except the chives). Then add the soup noodles and thin carrot slices and simmer until the noodles are tender. Reduce the heat, add the Maultaschen, and let them simmer in the hot broth for about 5 minutes (do not boil). Season to taste, if desired. Sprinkle with chives before serving. This is a quick and easy soup that can be enhanced with leftover potato salad, for example. Simply add this to the soup bowl at the very end.
