Date – banana – nut cake

Ingredients for 1 servings:

  • 225 g date(s), dried, roughly diced
  • 1 tsp baking soda
  • 300 ml milk
  • 275 g flour (wholemeal flour)
  • ½ pack of baking powder
  • 100 g butter, diced
  • 75 g hazelnuts, coarsely chopped
  • 2 bananas, ripe, mashed
  • 1 egg(s)

Working time approx. 30 minutes; Total time approx. 30 minutes

A whole-grain cake that contains no sugar at all!

Bring the dates, baking soda, and milk to a boil while stirring, then remove from the heat and let cool slightly. Meanwhile, place the flour in a bowl, add the butter, and knead until the mixture resembles breadcrumbs. Stir in the nuts, bananas, egg, and dates. Pour into a greased and lined loaf pan and bake at 180°C for about 45 minutes. Do the toothpick test! Remove from the pan and let cool. If desired, brush the warm cake with honey. This cake really doesn’t need any added sugar; the bananas and dates are sweet enough.
