Ingredients for 2 servings:

  • 1 cup sour cream
  • 1 tbsp tomato paste
  • 250 g spinach, fresh or frozen
  • 6 lasagna sheets
  • 250 ml vegetable stock
  • ½ onion(s)
  • salt and pepper
  • Paprika powder, sweet
  • Cayenne pepper
  • nutmeg
  • rosemary
  • oregano

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

First, dice the onion into small cubes and fry until translucent. Then, deglaze the onions with the vegetable stock and add the spinach. Season to taste and simmer for 10 minutes. Meanwhile, mix the sour cream with the tomato paste. When the sauce is cooked, pour about 3-5 tablespoons into a small baking dish. Then place a lasagna sheet on top and spread about 1 tablespoon of the sour cream over it. Then add about 2 tablespoons of the sauce and another lasagna sheet, until the sauce and the lasagna sheets are used up. The last layer should be the sauce. Bake in the oven at 160 degrees Celsius (320 degrees Fahrenheit) for about 20 minutes.
