Ingredients for 1 servings:
- 75 g butter, soft
- 25 g sugar
- 2 packets of vanilla sugar
- 2 eggs
- 150 g natural yogurt or yogurt of your choice
- 100 g spelt flour
- 100 g buckwheat flour
- 1 tsp, crushed espresso powder, instant
- 1 tsp baking powder
- 1 pinch of baking soda
- 150 ml mineral water
- Fat for the waffle iron

Whisk the softened butter with the sugar, vanilla sugar, and eggs, then add the yogurt. Combine both flours with the espresso powder, baking powder, and baking soda, and gradually add to the batter, stirring continuously. The batter will appear a bit runny at first, but will thicken over time and bake beautifully. Simply pour it in batches into a preheated and greased waffle iron. This makes 6 waffles. They’re not as sweet but taste great on their own or with jam. Tip: If you like it sweeter, you can top with powdered sugar, honey, Nutella, or something similar.
