Ingredients for 1 servings:

  • 300 g banana(s), preferably very ripe
  • 75 g oat flakes or muesli
  • 1 m.-sized egg(s)
  • 1 tsp baking powder
  • 50 g berries or apple of your choice
  • 1 tsp vanilla or cinnamon or delicious cocoa

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

without flour – for 12 pieces

Preheat oven to 220°C (top/bottom heat). Peel the bananas and mash them in a bowl. Add the remaining ingredients. Chop the fruit of your choice and gently stir in. This creates a mixture that easily presses into molds. If the mixture is too runny, simply add more oats. Pour the batter into 12 prepared muffin cups (I use silicone). Place in the preheated oven and bake for 5 minutes. Then reduce the temperature to 190°C (top/bottom heat) and bake for about another 12 minutes. I kept them in the refrigerator, but I don’t know if that’s necessary. They’re very moist.
