Summery couscous salad

Ingredients for 4 servings:

  • 200 g couscous
  • 300 ml water, boiling
  • 1 vegetable stock cube
  • 3 tomatoes
  • 1 small zucchini
  • 1 bell pepper(s), yellow
  • 3 tbsp mixed fresh herbs (e.g. oregano, parsley, chives)
  • 2 tbsp vegetable oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

quick, tasty, ideal for parties, barbecues, etc.

Pour boiling water over the couscous in a bowl. Add the vegetable stock cube and stir briefly. Let it swell, adding more water if necessary. Meanwhile, wash or trim the vegetables and then dice them. Wash and finely chop the herbs. Mix these ingredients with the couscous. Add the oil and finally season with salt and pepper.
