Ingredients for 2 servings:
- 500 g broccoli
- Water (salt water)
- 2 cups cream cheese (country cream) or sour cream
- 5 eggs
- 200 g cheese (Emmental), grated
- salt and pepper
- 1 pinch of nutmeg
- e.g. breadcrumbs
- some butter or margarine or oil

Clean the broccoli, cut into pieces, and cook in salted water for 10 minutes. Remove from the water, drain, and set aside. Whisk the cream cheese with the eggs and grated Emmental cheese, then season generously with salt, pepper, and nutmeg. Grease a baking dish with butter and dust with breadcrumbs. Arrange the broccoli in the dish and pour the egg mixture over it. Preheat the oven to 200°C and bake the broccoli flan for 20-25 minutes, until the egg mixture has set and is lightly browned. The broccoli flan is a great side dish to steak. It’s certainly high in calories, but it’s delicious and easy to prepare.
