Vegan Apple and Nut Muffins

Ingredients for 1 servings:

  • 4 apples, peeled, pitted
  • 100 g walnuts, chopped
  • 200 g margarine, purely vegetable
  • 250 g cane sugar
  • 150 g applesauce
  • 300 g spelt flour, type 630
  • 1 pack of cream of tartar baking powder
  • 1 tsp, smothered cinnamon
  • 150 ml soy milk (soy drink)
  • Icing sugar or chocolate coating for decoration

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Preheat oven to 180°C. Beat margarine, brown sugar, and applesauce until fluffy. Combine cream of tartar, flour, and cinnamon, and add to the pan. Fold in the walnuts and apples. If the batter becomes too stiff, thin with soy milk. Pour batter into the wells of a 12-cup muffin tin. The muffins will not rise as much. Bake for about 20 minutes. Dust the muffins with powdered sugar or cover with chocolate coating.
