20 minutes – Paprika stew with Cabanossi

Ingredients for 4 servings:

  • 3 bell peppers, red, green, yellow
  • 1 kg tomato(s) or
  • 1 liter of tomato(s), chopped from the can
  • 2 m.-sized onion(s)
  • 250 g Cabanossi
  • 1 tbsp oil
  • 200 ml red wine
  • 200 ml water, possibly less
  • 2 tbsp tomato paste
  • 1 tsp vegetable broth, instant
  • oregano
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slice the peppers and tomatoes into small pieces. Slice the onions. Slice the Cabanossi and fry in hot oil for about 2 minutes. Add the peppers and onions and fry for another 2 minutes. Add the tomatoes and stir in the tomato paste. Deglaze with wine and water, then add the vegetable stock. If using canned tomatoes, you don’t need the full 200 ml of water. Simmer for 5-7 minutes and season with salt, pepper, and oregano. Serve with white bread or rice.
