when things have to go quickly

Slice the bell peppers and Cabanossi into strips, dice the onion, and press the can of tomatoes through a sieve. You can, of course, use fresh tomatoes, but I rarely have them at home. Lightly fry the bell peppers and Cabanossi in a pan with a little oil. Then add the onion and tomatoes. Season with salt, pepper, and a pinch of sugar. Simmer everything until the tomato sauce thickens. A delicious leftover dish that’s quick and easy.
