Minced noodles with peppers

Ingredients for 4 servings:

  • 300 g penne rigate
  • salt water
  • 500 g minced meat, mixed
  • 1 onion(s)
  • 350 g red bell pepper(s)
  • 2 tbsp tomato paste
  • 250 ml vegetable stock
  • some thyme sprigs, fresh or dried
  • 1 cup sour cream
  • salt and pepper
  • Oil (sunflower oil)

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions. Finely dice the onion, wash the bell peppers, and cut into pieces. Fry the minced meat and onion in a little oil until crumbly. Add the bell peppers and season with salt and pepper. Fry for about 5 minutes, turning occasionally. Then add the tomato paste and fry for another 5 minutes. Deglaze with vegetable stock. Simmer. Then add the thyme. Mix in the well-drained pasta. Serve with a generous dollop of sour cream.
