Lime and arugula butter

Ingredients for 1 servings:

  • 250 g butter, soft
  • 80 g arugula
  • 1 clove(s) garlic
  • n. B. Lime(s), approx. 1 – 2, zest and juice
  • 1 tsp honey or maple syrup
  • Sea salt and pepper, freshly ground
  • possibly chili flakes or fresh chili pepper
  • 1 tbsp peppercorns, pink

quick to make, spicy and fresh

Cream the softened butter with a fork in a bowl. Trim and finely chop the arugula. Peel and chop the garlic clove, then mash it with the back of a knife and a little sea salt until it forms a paste. Grate the zest of 1 large or 2 small limes and squeeze out the juice. Mix the butter, arugula, garlic paste, honey or maple syrup, and lime zest together, then add the lime juice a spoonful at a time to taste (it shouldn’t be too acidic, but should still have an intense lime flavor). Season with sea salt and pepper. Transfer to a bowl and chill for 2 hours. Tip: If you like it spicy, you can add chili flakes or finely chopped chili. To serve, sprinkle the pink peppercorns over the lime and arugula butter. The butter tastes great on fresh white bread, but it’s also a great addition to a barbecue or buffet. It also pairs perfectly with shrimp, mussels, or fish.
