Ingredients for 3 servings:
- 6 small zucchini, halved and hollowed out
- 250 g minced meat
- 2 onions, diced
- 1 garlic clove(s), squeezed
- 1 tomato(s), diced
- 100 ml vegetable stock
- 100 g feta cheese, diced
- salt and pepper
- Paprika powder
- possibly olive oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Steam the halved and hollowed-out zucchini in a little water in a pot for about 10 minutes, then transfer to a casserole dish. Sauté the onion and garlic in the vegetable stock, then add the minced meat and brown. Add half of the diced tomatoes to the minced meat and brown. Add the hollowed-out zucchini flesh to the meat. Season with salt, pepper, and paprika. Let it simmer for about 10-15 minutes. Spread this mixture over the zucchini. Top with the remaining diced tomatoes and sprinkle with feta cheese. Bake in the oven at 180°C (top/bottom heat) for about 15-20 minutes. You can also drizzle with olive oil and then return to the oven.
