Plum cake with sponge cake

Ingredients for 1 servings:

  • 1.2 kg plums
  • 250 g butter or margarine, soft
  • 250 g sugar
  • 2 packets of vanilla sugar
  • 4 eggs
  • 350 g flour
  • 1 tbsp baking powder
  • 60 g rusks, crumbled
  • 1 tsp cinnamon

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 30 minutes

Sheet cake, for 20 pieces

Wash, halve, and stone the plums. Preheat the oven to 180°C (top and bottom heat). Cream the butter with the sugar and a sachet of vanilla sugar until fluffy. Beat in the eggs one at a time. Sift the flour with the baking powder and quickly mix everything into a smooth batter. Spread the batter onto a greased or parchment-lined baking sheet. Mix the rusk crumbs, cinnamon, and the remaining vanilla sugar and sprinkle half of it over the batter. Top with the plums, round side down, and press them lightly into the batter. Sprinkle the remaining crumb mixture over the top. Bake the cake on the second rack from the bottom for approx. 40-50 minutes. Remove the finished cake from the oven and let it cool. Serve with freshly whipped cream.
