Curry fig aioli

Ingredients for 1 servings:

  • 2 garlic cloves
  • 2 figs
  • 2 egg yolks
  • 100 ml sunflower oil
  • 50 ml olive oil, good
  • 1 tsp lemon juice
  • ½ tsp salt
  • ½ tsp grainy mustard, alternatively medium hot
  • 1 tsp honey
  • 2 tsp curry powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely chop the garlic. Chop the figs. Place all ingredients in a tall mixing bowl suitable for a hand blender (the bowl should be only slightly larger than the hand blender). Turn on the hand blender only at the very bottom of the bowl. Whisk everything together thoroughly, then slowly pull the blender upwards.
