Bacon and asparagus

Ingredients for 4 servings:

  • 750 g white asparagus
  • 1 organic lemon(s), sliced
  • 2 eggs
  • 3 slices of bacon
  • Salt and pepper, from the mill
  • Chive rolls

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

a good alternative to hollandaise

Peel the asparagus, trim the ends, and cook with two lemon slices for about 8-10 minutes. I always use a steamer, but you can also cook it on the stovetop as usual. Whisk the eggs and season with salt and pepper. Halve the bacon. Place the cooked asparagus in a casserole dish, pour the egg mixture over it, and place the bacon on top. Cook in a preheated oven at 220°C on the middle rack for 15-20 minutes. Serve sprinkled with chives. Boiled potatoes go well with this dish.
