Ingredients for 2 servings:
- ½ bag(s) of pasta (penne or tortiglioni)
- salt water
- 1 bag of mozzarella
- 1 cup of cream
- 1 package creamed spinach
- salt and pepper
- nutmeg
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
It’s best to thaw the spinach overnight, or just before cooking in the microwave. Cook the pasta (I prefer penne, as it absorbs a lot of the sauce) in salted water until al dente. While the pasta is cooking, cut or tear the mozzarella into small pieces. Gently heat the spinach in a saucepan, adding the cream and mozzarella. Season the cheese and spinach cream with salt, pepper, and nutmeg to taste (but leave some for the pasta). Drain the pasta and return it to the pan. Pour the spinach mixture over it and stir thoroughly.
