Walnut ice cream

Ingredients for 1 servings:

  • 70 g walnuts
  • 2 tbsp sugar
  • 4 dl cream
  • 4 egg yolks
  • 60 g powdered sugar
  • 2 tbsp honey

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Roughly chop 50g of walnuts. Melt the 2 tablespoons of sugar in a pan and caramelize the roughly chopped walnuts. Spread out on a baking sheet to cool. Finely grind 20g of walnuts, bring the cream to a boil, add the ground walnuts, and set aside. Whisk the egg yolks with the powdered sugar and honey until smooth. Stir in the cream and whip on medium speed until creamy (careful! Do not boil!). Let cool. Freeze the chilled mixture in the ice cream maker for 45-60 minutes until creamy. Stir in the caramelized nuts at the very end while the machine is still running.
