Ingredients for 2 servings:

  • 240 g chicken breast fillet(s)
  • 500 g carrot(s)
  • 1 bell pepper(s), yellow
  • 2 tsp oil
  • ½ lemon(s), the juice
  • ½ tsp broth, granulated
  • 2 garlic cloves
  • curry powder
  • 10 olives, black
  • salt and pepper
  • Paprika powder
  • possibly water if needed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean, peel, and dice the vegetables. First, heat 1 teaspoon of oil and sauté the carrots. After 5 minutes, add the diced bell peppers and cook both until cooked through. Add water if necessary. Cut the chicken breast into pieces and fry in a second pan with another teaspoon of heated oil. Deglaze the meat with lemon juice, add the broth and seasonings, and let it simmer for another 5-10 minutes over low heat. Add the al dente vegetables and olives to the meat. Serve hot. Serve with rice or potatoes. 5.5 WW Points per person (with side dish)
