Date-walnut bread

Ingredients for 4 servings:

  • 200 g date(s), pitted
  • 100 g walnuts, chopped
  • 1 egg(s)
  • 200 g sugar
  • 300 g flour
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 1 tsp baking soda
  • 225 ml water, hot
  • 1 tsp baking powder

Working time approx. 35 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 35 minutes

Chop the pitted dates into small pieces. Sprinkle with baking soda and pour over the hot water, then stir. The dates need to soak for a few hours (I always do this overnight). Note: The baking soda softens the tough skin of the dates and makes them easier to digest. Preheat oven to 190°C. Whisk the egg until frothy, then add the sugar and vanilla sugar. Mix the flour with the baking powder and stir into the egg-sugar mixture. Gradually add the walnuts, dates (including any remaining water), and salt to the batter. Continue kneading for a few minutes. Grease a loaf pan or line it with baking paper. Pour in the batter and bake for about 1 hour on the second shelf from the bottom (do the toothpick test).
