Covered applesauce cake

Ingredients for 1 servings:

  • 350 g flour
  • 110 g sugar
  • 2 eggs
  • 175 g butter, room temperature
  • Pack of baking powder
  • 500 ml apple juice, 100% fruit content
  • 2 tbsp sugar
  • 2 packs of pudding powder, cream flavor
  • 1 jar applesauce
  • 1 packet of powdered sugar
  • e.g. water and/or lemon juice

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 15 minutes

– like at the bakery –

Knead the dough ingredients together. If the dough still sticks to your fingers, add a little more flour. Grease a springform pan (26 or 28 cm) and press the dough into it, leaving a little extra for the topping. Form a rim (about as high as the edge of the pan). Then bring the apple juice and sugar to a boil. Stir in the pudding mix mixed with a little apple juice and bring the pudding to a boil briefly (it will thicken immediately). Stir in the applesauce. Pour the mixture onto the dough and place the flattened, rolled-out dough piece over it as a topping. Bake the cake for 45 minutes at 180 degrees Celsius (350 degrees Fahrenheit) using top/bottom heat. The dough should be golden yellow. Let cool in the springform pan. When the cake is cold, mix the icing and spread it thickly over the top. Place the cake in the refrigerator. Only remove the cake from the pan when it is thoroughly chilled and ready to serve. Tip: If desired, you can add finely chopped apple pieces and raisins to the filling.
