Wholemeal bread dumplings

Ingredients for 3 servings:

  • 6 slices of wholemeal toast
  • 3 eggs
  • 50 ml milk
  • 1 tbsp breadcrumbs
  • 1 tsp salt
  • 1 tsp dried herbs, e.g. thyme

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes

Let the slices of bread dry slightly or toast them briefly. Then roughly tear them into pieces and mix them with the other ingredients to form a dough that isn’t too moist. Let it rest in the refrigerator for about 1 hour. Bring plenty of salted water to a boil and, in the meantime, form 6 dumplings from the dough. Let them rest in gently simmering water for about 15-20 minutes. The brown dumplings have a stronger flavor than those made from bread rolls. You can also mix in ground nuts.
