Ingredients for 8 servings:

  • 3 kg pork belly, with rind
  • 1 liter of water
  • 10 cloves garlic
  • Salt
  • pepper

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 2 hours; Total time approx. 1 day 2 hours 10 minutes

Hellstrøm’s perfect rib

Rub the pork belly with salt 1-2 days in advance and let it rest. Score the rind with a knife and season with pepper. Preheat the oven to approximately 180°C. Pour the water into a roasting pan and add the whole, unpeeled garlic cloves. Place the pork belly in the roasting pan with the rind facing down and roast for 1 hour. Turn the pork belly over and continue cooking for another hour. Be careful not to dry it out. If there’s too little water, add more. If the rind isn’t crispy enough, increase the temperature to approximately 230°C at the end. Serve with potato salad.
