Ingredients for 1 servings:
- 50 g buttermilk
- 100 g butter
- 1 egg yolk or half an egg
- 50 g brown sugar
- 50 g white sugar
- some vanilla
- ¼ tsp salt
- 130 g wheat flour
- 130 g wholemeal spelt flour

First, preheat the oven to 200°C (top/bottom heat) and line a baking sheet with parchment paper. Now you can prepare the dough: briefly beat the egg, butter, sugar, buttermilk, vanilla, and salt, then combine the two types of flour and stir in. The dough will be soft and must be chilled (about 15 minutes). Once the dough is cold, you can easily form small balls out of it and flatten them. I always make balls about 1 cm in diameter. The cookies don’t spread much, so you can place them relatively close together on the baking sheet. They then need to bake for about 12 minutes, until they turn a nice caramel brown on the bottom. If you don’t like it that simple, you can also mix in nuts, chocolate, raisins, or something similar, or replace some of the flour with oatmeal.
