Potato and Apple Soup

Ingredients for 4 servings:

  • 30 g bacon
  • 50 g margarine
  • 500 g potatoes
  • 3 apples
  • 1 liter vegetable broth
  • salt and pepper
  • nutmeg
  • 200 ml cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the potatoes and apples. Dice the bacon. Sauté the bacon in the margarine until translucent, then add the potatoes and apples. Sauté briefly and add the broth. Season and simmer for about 15 minutes. Purée with a hand blender. Heat the mixture again, add the cream, and season to taste.
