Ingredients for 2 servings:
- 1 cucumber(s), peeled and pitted, in large pieces
- 1 onion(s), diced
- little oil
- Salt
- pepper
- 1 tbsp mustard powder
- 1 cup vegetable broth
- 1 tbsp dill, dried or fresh
- 1 tbsp crème fraîche or legere
- possibly cornstarch or locust bean gum, mixed with a little water
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Sauté the onion in oil until translucent, add the cucumber pieces, and simmer briefly. Season with salt and pepper, add the mustard powder, and pour in the vegetable stock. Simmer for about 20 minutes until translucent. Then stir in the crème fraîche and mix in the dill. If the vegetables seem too thin, thicken with the thickener and season again.
