Tomato-coated braised cucumbers with fresh basil ala Zaubergaum

Ingredients for 4 servings:

  • 2 cucumber(s), fresh green
  • 4 small onions
  • 2 cloves garlic
  • 1 tbsp tomato paste, 3 times concentrate
  • 250 g tomatoes
  • 1 bunch of basil
  • 1 tsp salt
  • 2 tbsp, leveled vinegar, 40%
  • 2 tbsp sugar
  • 1 cup of cream, 125 g
  • 4 cl olive oil
  • Pepper, colorful from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dish contains lactose

Peel the cucumbers, halve them, and cut them into 1 cm thick pieces. Peel the onions and slice them into strips. Peel the garlic and chop them finely. Wash the tomatoes, remove the blossoms, and chop them into bite-sized pieces. Heat olive oil in a pan, sauté the cucumbers, onions, and garlic. Add the tomatoes, tomato paste, and cream. Season with salt, vinegar, sugar, and pepper. Finally, slice the basil and fold it in.
