Green beans in egg sauce

Ingredients for 4 servings:

  • 750 g beans, green
  • 40 g butter
  • 30 g breadcrumbs
  • 3 tbsp flour
  • ¼ liter broth
  • Salt
  • 1 tsp lemon juice
  • Seasoning
  • 3 tbsp white wine
  • 2 eggs, hard-boiled
  • ½ bunch chives
  • 30 g margarine
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the trimmed beans in salted water for 25 minutes. Drain and reserve the liquid. Transfer the beans to a warmed bowl. Sprinkle the breadcrumbs toasted in butter over the beans. Keep warm. Heat the margarine, stir in the flour, add 250 ml of the bean liquid and 250 ml of the stock, bring to a boil, stirring constantly, and simmer on low heat for about 10 minutes, stirring frequently. Season to taste with salt, nutmeg, lemon juice, and ground spice. Pour in the white wine, peel and dice the hard-boiled eggs, and add them with the chopped chives. Bring the sauce to a boil, then immediately pour it over the beans.
