Fillet beans with lemon sauce

Ingredients for 4 servings:

  • 750 g beans (fillet beans)
  • 2 sprigs savory
  • 7 g butter
  • 5 egg yolks
  • 1 lemon(s), untreated
  • salt and pepper
  • Tabasco

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim the ends of the beans, wash the beans, and add them to boiling salted water with the savory. Sauté for about 10 minutes. Heat the butter and skim it until clear. Combine in a saucepan with 5 egg yolks, the juice of the lemon, and the grated zest. Season with salt, pepper, and Tabasco. Whisk in a double boiler for about 5 minutes until foamy. Remove the pan from the boiler and stir in the clarified, still-melted butter drop by drop. Pour the lemon sauce over the fillet beans and serve. Serve with smoked salmon or fillet steak.
